One-Pan Honey Garlic Kielbasa and Veggies

A fast and satisfying one-pan meal that combines sweet honey, savory garlic, and kielbasa with colorful veggies for an easy family-friendly dinner.

Ingredients

  • 1 pound Kielbasa, sliced
  • 2 tablespoons Honey
  • 3 cloves Garlic, minced
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper, sliced
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes, halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with foil.
  2. Cut kielbasa into 1/2 inch slices and prepare vegetables.
  3. Whisk together honey, garlic, soy sauce, and olive oil in a small bowl.
  4. Toss potatoes and carrots with remaining oil, salt, and pepper, then spread on the baking sheet.
  5. Roast for 20 to 25 minutes until fork tender.
  6. Add kielbasa and bell peppers to the sheet, drizzle with glaze, and toss to coat.
  7. Return to oven and roast for an additional 10 to 15 minutes until the kielbasa is warmed through and the glaze is sticky.
  8. Finish with chopped parsley or green onions.

Notes

For a leaner version, use turkey or chicken sausage. Substitute vegetables according to preference.
