A warm and delightful breakfast casserole with flaky croissants, eggs, and cheese, perfect for meal prep and serving a crowd.

  • 4 croissants, torn into pieces
  • 6 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked beef or cooked sausage, chopped
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Butter or cooking spray for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. In a large bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. Place the torn croissant pieces into the greased baking dish. Add in the chopped beef or sausage, green onions, and shredded cheese.
  4. Pour the egg mixture over the croissants and other ingredients, making sure everything is well combined.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. In the morning, remove the cover and bake the casserole for 30-40 minutes or until the top is golden and set.
