1 cup peanut butter (creamy or crunchy)
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
30 chocolate kisses
Instructions
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
In a large bowl, cream together the peanut butter, granulated sugar, brown sugar, and butter until smooth.
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Roll the dough into 1-inch balls and roll them in granulated sugar.
Place on the prepared baking sheets about 2 inches apart, and bake for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a twist, substitute chocolate kisses with other chocolate candies.
