Delightful Pink Velvet Cupcakes with a fluffy texture and a tasty cream cheese frosting, perfect for any occasion.

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Pink food coloring
  • For Frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk
  • Sprinkles for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs, buttermilk, and vanilla extract, mixing well.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Add a few drops of pink food coloring until you achieve your desired color.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  8. For the frosting, beat together the softened butter and powdered sugar until light and fluffy. Add in the vanilla and milk to reach the desired consistency.
  9. Frost the cooled cupcakes and sprinkle with edible sparkles or sprinkles before serving.
