Delightful soft and chewy cookies filled with rich pistachio flavor and creamy pistachio cream.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • 1 cup chocolate chunks
  • 1/2 cup pistachio cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine flour, baking soda, and salt. Gradually add this mixture to the creamed mixture until well combined.
  5. Fold in the chopped pistachios and chocolate chunks.
  6. Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  7. Make a small indentation in the center of each cookie and fill with a dollop of pistachio cream.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cooling on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For the best results, ensure your butter is properly softened and avoid over-mixing the dough after adding flour.
