A delicious and creamy pistachio mousse topped with rich chocolate ganache, perfect for any occasion.

Ingredients

  • 1 cup unsalted pistachios, shelled
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Pistachio bits for garnish

Instructions

  1. Soak pistachios in water for at least 2 hours, then drain and blend until smooth.
  2. In a bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
  3. Fold the pistachio paste into the whipped cream gently until fully combined.
  4. Pour the mousse into serving dishes and refrigerate for at least 2 hours.
  5. Meanwhile, prepare the chocolate ganache by heating 1/2 cup of heavy cream and pouring it over the chocolate chips in a bowl. Stir until smooth.
  6. Once the mousse has set, pour a layer of chocolate ganache over the mousse.
  7. Garnish with crunchy pistachio bits before serving.
