Pumpkin Chai Tiramisu

A delightful twist on the traditional Italian tiramisu, combining creamy mascarpone, pumpkin, and chai spices for a seasonal treat.

Ingredients

  • 1 cup heavy whipping cream
  • 1 cup pumpkin puree
  • ⅓ cup sugar
  • 2 tablespoons maple syrup
  • 8 oz. mascarpone cheese
  • 1 cup chai concentrate
  • 24 tablespoons spiced rum (optional)
  • 2 tablespoons cocoa powder
  • 1 teaspoon pumpkin pie spice
  • 24 ladyfingers
  • Bittersweet chocolate (for shaving on top, optional)

Instructions

  1. In a medium bowl, whip the heavy whipping cream until soft peaks form.
  2. In another bowl, beat together the pumpkin puree, sugar, maple syrup, and mascarpone cheese until smooth.
  3. Fold the whipped cream into the pumpkin mixture gently until combined.
  4. In a shallow bowl, mix together the chai concentrate and spiced rum, if using.
  5. In a small bowl, mix together the cocoa powder and pumpkin pie spice.
  6. Sift half of the cocoa powder and pumpkin pie spice mix onto the bottom of an 8×8-inch baking dish.
  7. Dip half of the ladyfingers into the chai concentrate briefly and layer them rounded-side-up in the baking dish.
  8. Spread half of the pumpkin cream mixture on top of the ladyfingers.
  9. Repeat with remaining ladyfingers and pumpkin cream mixture.
  10. Dust the top layer with the remaining cocoa powder and pumpkin pie spice mixture.
  11. Cover with plastic wrap and refrigerate for at least 3-4 hours, preferably overnight.
  12. Before serving, dust with chocolate shavings if desired, cut into 9 slices, and enjoy chilled.

Notes

For best results, use high-quality ingredients and soak ladyfingers briefly to avoid sogginess.
