Delicious and chewy pumpkin chocolate chip oat bars, perfect for any season, especially fall.

Ingredients

  • 1/2 cup pumpkin puree, mashed
  • 1 cup runny nut butter (almond, cashew, sunflower seed, or other preference)
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free old fashioned oats
  • 3 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 glass baking dish.
  2. In a large bowl, whisk together pumpkin puree, nut butter, eggs, maple syrup, and vanilla extract.
  3. Fold in oats, pumpkin pie spice, baking soda, and salt.
  4. Lastly, fold in chocolate chips.
  5. Pour the mixture into the greased baking dish and spread it out evenly.
  6. Bake in the oven for 40 minutes until cooked through in the middle.
  7. Cut into bars and serve warm for the best taste!
