  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/2 cup canned pumpkin puree
  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Cream cheese glaze (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the pumpkin puree, milk, oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool slightly before drizzling with cream cheese glaze if desired.

Notes

For an extra treat, drizzle with cream cheese glaze. Store in an airtight container at room temperature for 2-3 days or freeze for up to 3 months.
