Delicious pumpkin oatmeal cream pies filled with a creamy pumpkin frosting, perfect for fall gatherings.

  • 1 cup old-fashioned oats
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 2 tbsp pumpkin puree
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, oats, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg, pumpkin puree, and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a cohesive dough forms.
  6. Scoop portions of dough onto a baking sheet and bake for 10-12 minutes.
  7. While cookies cool, prepare the filling by mixing cream cheese, softened butter, powdered sugar, pumpkin puree, and pumpkin pie spice until smooth.
  8. Once cookies are cool, spread the filling between two cookies to form cream pies.

Notes

For best results, ensure your butter is properly softened and do not overbake the cookies.
