Nutritious pumpkin protein balls that make for a great post-workout snack or healthy treat.

Ingredients

Scale
  • 1 cup rolled oats (gluten free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (sub maple syrup for vegan)

Instructions

  1. Combine all ingredients in a large bowl.
  2. Using a small cookie scoop, scoop out approximately 24 small balls.
  3. Use your hands to roll them and place on a plate.
  4. Freeze for 10 minutes.

Notes

For a different twist, substitute almond butter with peanut butter or sunflower seed butter. You can also add in dark chocolate chips or chopped nuts for extra flavor.
