2/3 cup brown sugar
3 teaspoons pumpkin pie spice
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon Kosher salt
1 cup pumpkin puree
1/4 cup maple syrup
2 eggs
1/3 cup coconut oil (melted)
2 teaspoons vanilla extract
Non-stick cooking spray
1/4 cup coconut oil (melted)
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
Instructions
Preheat the oven to 350°F (175°C).
In a medium bowl, mix together all the dry ingredients: flour, brown sugar, pumpkin spice, baking powder, baking soda, and salt.
In a separate bowl, whisk together all the wet ingredients: pumpkin puree, maple syrup, eggs, melted coconut oil, and vanilla extract.
Gradually incorporate the wet ingredients into the dry ingredients until just combined.
Transfer the batter into a gallon ziplock bag, cut the corner to create a piping bag, and pipe the batter into the donut pan, filling each mold about 3/4 full.
Spray the donut pan with cooking spray and bake for about 18 minutes.
Check doneness with a toothpick; if it comes out clean, remove donuts from the oven.
Let them cool on a rack for 5 minutes.
For the topping, combine sugar, cinnamon, and pumpkin spice. Lightly brush the donuts with melted coconut oil and dip each side into the mixture.
Serve warm and enjoy!
