A cozy yet elegant soup featuring tender chicken, pillowy gnocchi, sun-dried tomatoes, and creamy spinach in a flavorful broth.

  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1½ tsp Kosher salt, divided (1 tsp for chicken, ½ tsp for vegetables)
  • 1 tsp dried oregano
  • ¼ tsp freshly ground black pepper
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp unsalted butter
  • 1 medium sweet onion, diced
  • 2 sticks celery, finely chopped
  • ½ cup sun-dried tomatoes, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 Tbsp tomato paste
  • 4 cups low-sodium chicken broth
  • 2 Tbsp pesto
  • 1 Parmesan rind (optional but recommended)
  • 16 oz dried potato gnocchi
  • ½1 cup heavy cream
  • 5 oz fresh baby spinach
  • ½ cup grated Parmesan

Instructions

  1. Season the chicken with 1 tsp Kosher salt, oregano, and black pepper.
  2. Brown the chicken in a large soup pot with olive oil and butter for 4–5 minutes. Transfer to a plate.
  3. Sauté onion and celery with ½ tsp Kosher salt for 3–5 minutes until softened. Add sun-dried tomatoes, garlic, and tomato paste.
  4. Pour in the chicken broth, stir in pesto, and add the Parmesan rind. Simmer for 10–15 minutes.
  5. Return the chicken to the pot and add dried gnocchi. Simmer for 3–5 minutes until the gnocchi float.
  6. Stir in heavy cream and add spinach and grated Parmesan. Heat until spinach wilts. Adjust seasoning with salt and pepper before serving.

Notes

For a lighter option, use half-and-half instead of heavy cream and serve with crusty bread.
