Roasted Chocolate Cherry Brownies

Delicious brownies featuring roasted cherries and rich chocolate for a burst of flavor in every bite.

Ingredients

  • 2 cups Cherries, cut in half, washed, pitted
  • Sprinkle of sugar
  • 1 1/3 cups White granulated sugar
  • 2 Large eggs
  • 1 Egg yolk
  • 5 Tablespoons Unsalted butter, melted
  • 1/3 cup Oil (canola or vegetable)
  • 1 teaspoon Pure vanilla extract
  • 3/4 cup All-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 Tablespoon Cornstarch
  • 1 teaspoon Salt
  • 1 cup Semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper. Spread the halved cherries over the parchment paper and sprinkle with sugar. Bake for 10 minutes and let cool.
  2. Turn the oven down to 325°F. Spray an 8X8 inch pan with non-stick baking spray and line the bottom and two sides with parchment paper.
  3. In a mixing bowl, sift together the flour, cocoa powder, cornstarch, and salt.
  4. In another bowl, beat the sugar, eggs, and egg yolk on high for 5 minutes.
  5. Melt the butter and let cool slightly before adding it to the mixture along with the oil and vanilla; mix on low.
  6. Add the dry ingredients to the wet ingredients and gently fold until combined. Stir in half of the roasted cherries and chocolate chips.
  7. Pour the batter into the prepared pan, spreading it smooth. Bake for 40-50 minutes, until the edges are set and the center is slightly underdone.
  8. Let the brownies cool in the pan, then freeze for 15 minutes. Remove from the pan and top with the remaining cherries, cut, and serve.

Notes

Serve warm or at room temperature. Best enjoyed with vanilla ice cream or whipped cream.
