A delicious dessert that combines sweet honey and salty flavors in a creamy custard filling, all nestled in a flaky pie crust.

  • Pie crust (refrigerated or homemade)
  • 4 large egg yolks, lightly beaten
  • 2 1/2 cups (600 ml) heavy whipping cream
  • 2/3 cup (150 g) packed light brown sugar
  • 1/3 cup (45 g) cornstarch, sifted
  • 1/2 tsp salt
  • 1/2 cup (120 ml) honey
  • 2 tsp vanilla extract
  • Flaky sea salt, for sprinkling

Instructions

  1. Prepare the pie crust in a deep dish 8-inch pie pan or 9-inch pie pan and chill it in the fridge.
  2. In a medium saucepan, mix heavy whipping cream, brown sugar, cornstarch, and salt over medium heat, stirring constantly until it boils and thickens.
  3. Remove the saucepan from heat and temper the egg yolks by gradually whisking in the hot cream mixture.
  4. Pour the egg mixture back into the saucepan and stir in honey and vanilla extract until combined.
  5. Pour the custard into the chilled pie crust and spread evenly.
  6. Bake at 375°F (190°C) for about 40-45 minutes, until bubbling and golden brown.
  7. Let the pie cool at room temperature, then refrigerate until chilled.
  8. Before serving, sprinkle flaky sea salt on top, slice, and enjoy.

Notes

Serve chilled and consider pairing with whipped cream or fresh fruit for an added touch. Store leftovers in the refrigerator for 3-4 days or freeze for longer storage.
