A warm and filling one-pot dish combining Italian sausage, tender potatoes, and colorful vegetables, perfect for chilly days.

Ingredients

  • 1 lb Italian sausage
  • 4 medium potatoes, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp thyme

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery, sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Remove the casing from the sausage and add to the pot, cooking until browned.
  5. Add diced potatoes, chicken broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  7. Stir in heavy cream and heat through.
  8. Serve warm.

Notes

Can be served with fresh parsley or grated cheese on top, and pairs well with crusty bread or salad. Stores in the fridge for up to three days or can be frozen for three months.
