A quick and easy single serve chocolate chip cookie recipe, perfect for satisfying late-night cravings without making a whole batch.

Ingredients

  • 20 g (1 tbsp + 1 tsp) room temperature butter
  • 15 g (1 tbsp + 1 tsp) brown sugar
  • 10 g (2 tsp) granulated sugar
  • 1 tbsp double cream or heavy cream
  • 1/4 tsp vanilla extract (optional)
  • 40 g (1/4 cup) plain flour/all purpose flour
  • 1/8 tsp baking soda
  • a pinch of salt
  • 30 g (2 tbsp + 2 tsp) chopped dark chocolate or chocolate chips

Instructions

  1. Cream the butter with the brown sugar and granulated sugar until soft and creamy.
  2. Add the heavy cream and vanilla; mix until combined.
  3. Add the flour, baking soda, and salt; mix until a dough forms.
  4. Fold in the chopped chocolate or chocolate chips.
  5. Chill the dough in the fridge for at least 30 minutes.
  6. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Place a ball of dough on the sheet and press extra chocolate pieces on top.
  8. Bake for 15–18 minutes until the edges are set and the center is still slightly soft.
  9. Let the cookie cool on the tray for 10–15 minutes before serving.

Notes

For best results, ensure butter is at room temperature and do not skip the chilling step.
