A cozy and delicious slow cooker meal where tender beef and flavorful potatoes cook together in garlic butter.

  • 1.5 lbs beef chuck, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a slow cooker, add the beef pieces and baby potatoes.
  2. In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  3. Stir in the salt, pepper, thyme, and beef broth. Bring to a simmer.
  4. Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
  5. Cover and cook on low for 6-8 hours or until the beef is tender.
  6. Serve hot, garnished with chopped parsley.

Notes

For enhanced flavors, add more herbs like rosemary or oregano. You can include carrots or other vegetables.
