Slow Cooker Lasagna Soup

An easy, comforting soup combining all the classic flavors of lasagna in a slow cooker.

Ingredients

  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 1 can (15 oz) diced tomatoes, undrained
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup ricotta cheese
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for garnish
  • Optional: splash of balsamic vinegar

Instructions

  1. Heat a large skillet over medium heat. Add the ground meat and cook until browned. Drain excess fat.
  2. Transfer the cooked meat to the slow cooker. Add the diced onion, minced garlic, chicken broth, marinara sauce, and diced tomatoes. Season with salt and pepper.
  3. Cover the slow cooker and cook on Low for 6-8 hours or on High for 3-4 hours.
  4. About 30 minutes before serving, stir in broken lasagna noodles. Cover and cook until tender.
  5. Before serving, stir in balsamic vinegar and top with ricotta and mozzarella. Adjust salt and pepper as needed.

Notes

For a vegetarian version, replace the meat with mushrooms and lentils. For gluten-free, use gluten-free noodles.
