  • 1 tablespoon cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses
  • Icing (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  7. Flatten the cookies slightly and bake for 8-10 minutes, until the edges are set but the centers are still soft.
  8. Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
  9. If desired, decorate with your icing ideas.

Notes

For best results, ensure butter is softened but not melted. Don’t overbake the cookies; slightly underbaking keeps them soft.
