Delicious and easy-to-make Soft Gingerbread Cookies filled with warm spices, perfect for cozy gatherings or the holiday season.

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup unsulfured molasses

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and molasses until well combined.
  5. Gradually mix in the dry ingredients until incorporated.
  6. Scoop tablespoon-sized balls of dough onto the lined baking sheets, leaving about 2 inches between each ball.
  7. Bake for 10-12 minutes until the edges are firm, but the centers remain soft.
  8. Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Chill the dough for about 30 minutes before baking to prevent spreading. Store in an airtight container for up to a week or freeze for up to three months.
