Delicious and fluffy sourdough pancakes with a hint of tanginess, perfect for breakfast or brunch.

  • 1 cup sourdough starter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 2 tablespoons sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Butter (for cooking)
  • Maple syrup (for serving)
  • Fresh fruit (for serving)

Instructions

  1. In a large bowl, mix together the sourdough starter, flour, milk, egg, sugar, baking soda, and salt until just combined.
  2. Heat a non-stick skillet or griddle over medium heat and add a little butter.
  3. Pour batter onto the skillet and cook until bubbles form on the surface and the edges look set.
  4. Flip and cook until golden brown on both sides.
  5. Serve warm with butter, maple syrup, and fresh fruit.

Notes

Use active and bubbly sourdough starter for the best results. Rest the batter for 10 minutes before cooking for fluffier pancakes.
