A quick and flavorful weeknight dish combining tender chicken, noodles, and a sweet-savory honey-soy glaze.

  • 1 lb chicken breast, diced
  • 810 oz noodles (egg noodles, chow mein, or rice noodles)
  • 34 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 23 green onions, chopped for garnish
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Cook the noodles according to the package instructions. Drain and set them aside, tossing with a little oil to prevent sticking.
  2. Heat the vegetable oil in a large pan over medium heat.
  3. Add the minced garlic and ginger. Sauté briefly until fragrant, about 30 seconds to 1 minute.
  4. Add the diced chicken. Season with salt and pepper. Cook, stirring occasionally, until browned and cooked through, about 6 to 8 minutes depending on piece size.
  5. In a small bowl, stir together the soy sauce and honey until blended. Pour the sauce over the chicken and let it bubble for a minute to heat through.
  6. Add the cooked noodles to the pan. Toss or use tongs to coat the noodles evenly in the sauce and chicken.
  7. Cook everything together for 2 to 3 minutes more so the sauce reduces slightly and becomes glossy. Taste and adjust seasoning.
  8. Transfer to plates and garnish with chopped green onions. Serve hot.

Notes

For a gluten-free option, use tamari instead of soy sauce. You can also reduce the honey for less sweetness and add a splash of rice vinegar for balance.
