Delightful bar-style desserts combining the sweetness of strawberries with the tang of lemon, perfect for any gathering.

  • 1 cup unsalted butter, at room temperature
  • 3/4 cup sugar
  • 1 large egg
  • 1/4 cup fresh squeezed lemon juice
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup diced fresh strawberries
  • 1 cup powdered sugar, sifted
  • 1 Tbsp strawberry puree
  • Lemon juice (about 1 Tbsp)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9-inch square baking pan with parchment paper.
  3. Cream the butter and sugar together until fluffy.
  4. Beat in the egg until fully incorporated.
  5. Add the lemon juice and mix well.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Add the dry ingredients to the wet mixture, mixing until no dry flour remains.
  8. Gently fold in the diced strawberries.
  9. Spread the mixture evenly in the prepared pan.
  10. Bake for 30-35 minutes until golden around the edges and the center is set.
  11. Let the blondies cool on a rack.
  12. For the glaze, puree the strawberries and strain to get 1 Tbsp of puree.
  13. Whisk together the powdered sugar, strawberry puree, and lemon juice until smooth.
  14. Spread the glaze over the cooled blondies and let it set before slicing.

Notes

For best flavor, use ripe strawberries. These blondies can also be made with frozen strawberries if thawed and drained.
