  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 2 chicken breasts, grilled and sliced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup diced red onion
  • 1/4 cup diced tomatoes
  • 1/4 cup crumbled cotija cheese (or queso fresco)
  • 2 tablespoons chopped fresh cilantro for garnish
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream or Greek yogurt (for lime crema)
  • Juice of 1 lime (about 2 tablespoons)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt for the crema

Instructions

  1. Cook the rice according to package directions and keep it warm. Fluff with a fork just before assembling.
  2. Heat a grill or grill pan to medium-high. Season the chicken breasts with salt and pepper and grill until an instant-read thermometer reads 165°F (about 6 to 8 minutes per side). Let rest for 5 minutes, then slice against the grain.
  3. Heat a skillet over medium heat and add the olive oil. Add the corn and cook, stirring occasionally, until some kernels are lightly charred, about 3 to 4 minutes.
  4. Sprinkle the chili powder, smoked paprika, cumin, 1/4 teaspoon salt, and 1/4 teaspoon black pepper over the corn. Toss and cook another 30 seconds to bloom the spices. Remove from heat.
  5. Whisk together the sour cream or Greek yogurt, lime juice, garlic powder, and 1/4 teaspoon salt. Adjust lime to taste and thin with water if needed.
  6. Assemble bowls: start with rice, add grilled chicken, charred corn, black beans, diced tomatoes, and red onion. Crumble cotija on top.
  7. Drizzle lime crema over each bowl and finish with chopped cilantro. Serve immediately.

Notes

Substitute plant-based yogurt for dairy-free option. For extra heat, add jalapeño or cayenne. Store leftovers separately for freshness.
