  • 1 cup corn, fresh or canned
  • 2 cups cooked rice
  • 1 avocado, diced
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Optional: cilantro for garnish

Instructions

  1. In a skillet over medium heat, cook the diced chicken breast until fully cooked, about 6-8 minutes, seasoning with salt and pepper.
  2. Add the corn to the skillet and stir for 2-3 minutes until heated through.
  3. In a large bowl, combine the cooked rice, chicken and corn mixture, avocados, and lime juice.
  4. Gently toss everything together until well combined.
  5. Serve the bowl warm and garnish with cilantro if desired.
