A fun and flavorful dish that combines the best of taco ingredients in a tasty bowl, perfect for busy weeknights.

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (for topping)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh cilantro and lime wedges (for garnish)

Instructions

  1. Rinse the rice under cold water, combine it with water or chicken broth in a pot, bring to a boil, reduce heat, cover, and let simmer for 15-20 minutes until fully cooked.
  2. In a large skillet, heat olive oil over medium heat, add ground beef or turkey, and cook until browned.
  3. Drain excess fat from the meat, stir in taco seasoning and canned black beans, cooking for another 2-3 minutes until heated through.
  4. In bowls, layer cooked rice, meat mixture, corn, and diced tomatoes.
  5. Top with shredded lettuce and cheddar cheese.
  6. Add salsa and optional garnishes like cilantro and lime wedges. Serve warm.

Notes

Use chicken broth for richer flavor in the rice. Add other vegetables for more color and nutrition.
