A warm and hearty breakfast or brunch casserole blending crispy tater tots, savory sausage, and melted cheese into a simple, satisfying meal.

  • 1 (32 oz) bag frozen tater tots
  • 1 pound ground breakfast sausage
  • 1 cup diced onion
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 1 tablespoon chopped fresh parsley or other herbs

Instructions

  1. In a large skillet over medium heat, cook the ground breakfast sausage until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess grease to prevent sogginess.
  2. Grease a baking dish and spread half of the frozen tater tots evenly across the bottom.
  3. Sprinkle the cooked ground sausage evenly over the tater tots, then distribute the diced onions on top.
  4. Add a layer of shredded cheddar cheese over the sausage and onion mixture. Top with the remaining frozen tater tots.
  5. In a bowl, whisk together the eggs, milk, salt, pepper, and any preferred herbs until smooth.
  6. Pour the egg mixture evenly over the casserole layers and bake at 375°F (190°C) for 40-45 minutes, or until set and bubbly.
