A delicious and healthy low sugar zucchini bread that’s perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 ½ cups grated fresh zucchini
  • 1 cup whole wheat flour
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp baking soda
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, mix grated zucchini, applesauce, and eggs until well combined.
  4. In another bowl, whisk together flour, baking soda, and cinnamon.
  5. Gradually add dry ingredients to the wet mixture while stirring gently to avoid overmixing.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool before slicing.

Notes

Store in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. Can be frozen for up to three months.
