A comforting turkey lentil soup that’s hearty, nutritious, and easy to prepare, perfect for chilly days.

  • 1 pound ground turkey
  • 1 cup green or brown lentils
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onions, carrots, and celery. Cook until they soften, about 5-7 minutes.
  3. Stir in minced garlic, cumin, salt, and pepper. Cook for an additional minute to release the spices’ aromas.
  4. Add the ground turkey, breaking it apart with a wooden spoon. Cook until browned.
  5. Add the lentils, diced tomatoes, and broth. Bring the mixture to a boil.
  6. Reduce the heat and let it simmer for 25-30 minutes, until the lentils are tender.
  7. Adjust seasoning as needed, garnishing with fresh parsley before serving.

Notes

This soup is versatile; substitute turkey with chicken or use vegetable broth for a vegetarian option. After refrigerating, add a touch of broth or water if soup is too thick.
