A delicious and easy breakfast casserole combining sweet blueberries with soft bread, perfect for impressing family and friends.

  • 1 loaf challah or brioche bread, cubed
  • 2 cups fresh blueberries (or frozen, thawed)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • Powdered sugar for dusting (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter or spray.
  2. In a bowl, whisk together eggs, milk, heavy cream, maple syrup, vanilla extract, ground cinnamon, and salt until well combined.
  3. Place bread cubes in the baking dish and sprinkle blueberries on top. Pour custard mixture evenly over the bread and fruit. Gently press down to ensure all bread is soaked. Cover and let sit in the fridge for at least one hour, or overnight for best results.
  4. Remove casserole from the fridge and let it sit at room temperature for about 15 minutes. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the center is set.
  5. Serve warm, topped with powdered sugar and whipped cream if desired.

Notes

Use day-old bread for the best texture. Letting the casserole sit overnight allows the flavors to meld perfectly. Experiment with different fruits or add nuts for extra crunch.
