Quick and easy vanilla French beignets that are light, crisp, and dusted with powdered sugar, perfect for brunch or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.
  2. In a separate bowl, beat the milk, egg, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry and stir gently until a soft, slightly sticky dough forms.
  4. Let the dough sit for 5–10 minutes.
  5. On a floured surface, roll the dough to about 1/2 inch thickness and cut into squares or diamonds.
  6. Heat oil in a deep fryer or heavy pan to 350°F (175°C).
  7. Fry a few pieces at a time for 2–3 minutes until puffed and golden.
  8. Drain on paper towels or a cooling rack.
  9. Dust with powdered sugar and serve warm.

Notes

For a tangier profile, substitute buttermilk for milk. For gluten-free, use a cup-for-cup gluten-free flour blend. For vegan, replace the egg with 1 tablespoon ground flaxseed mixed with 3 tablespoons water.
