Delightful and healthy Vegan & Gluten-Free Pistachio Cookies made with almond flour and natural sweeteners like maple syrup, perfect for snacks or desserts.

  • 1 ½ cups almond flour
  • 1 cup pistachios, chopped
  • ½ cup maple syrup or agave syrup
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, chopped pistachios, baking soda, and salt.
  3. In another bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Flatten the cookies slightly with your palm.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy your healthy treat!

Notes

Store cookies in an airtight container at room temperature for up to a week or refrigerate for two weeks. They can also be frozen for up to three months.
