A hearty and nutritious cabbage soup perfect for a healthy lifestyle, rich in flavor and low in calories.

Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, sliced
  • 2 stalks of celery, chopped
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large crockpot, combine all the ingredients.
  2. Stir well to ensure everything is mixed properly.
  3. Cover and choose to cook on low for 480 minutes or high for 240 minutes until the vegetables are tender.
  4. Once done, taste your soup and adjust the seasoning with salt and pepper before serving. Enjoy it warm!

Notes

For added flavor, consider sautéing the onions and garlic in olive oil before adding them to the crockpot. Feel free to add other vegetables or proteins for variation.
