A creamy, mildly spiced chili made with shredded chicken, white beans, and cream cheese, perfect for a comforting meal.

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup corn, fresh or frozen
  • 8 oz cream cheese, softened
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Place a large pot over medium heat and pour in the chicken broth. Add the shredded chicken, drained white beans, corn, and diced green chilies.
  2. Season with garlic powder, onion powder, cumin, and a pinch of salt and pepper. Stir to combine.
  3. Bring the mixture to a gentle simmer, letting it cook for 5 minutes.
  4. Reduce the heat to low. Add the cream cheese in chunks and stir until it melts completely.
  5. Continue to cook for 10 to 15 minutes, stirring occasionally, to thicken slightly.
  6. Ladle into bowls and garnish with chopped cilantro if desired.

Notes

Serve with tortilla chips or cornbread. Optionally top with lime wedges, shredded cheddar, or sliced avocado.
