A creamy and hearty white chicken chili that’s perfect for cozy weeknights and gatherings.

  • 1 pound cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot, heat some oil and sauté the chopped onion and garlic until they become soft and fragrant.
  2. Add in the shredded chicken, white beans, corn, and diced green chilies to the pot, stirring well to combine.
  3. Pour in the chicken broth and sprinkle in the cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes to allow the flavors to meld together.
  5. Serve hot, garnished with sour cream, shredded cheese, and fresh cilantro, if desired.

Notes

Feel free to substitute chicken with shredded turkey or use vegetable broth for a vegetarian option. To enhance flavor, simmer longer, and for a spicy kick, add jalapeños or cayenne pepper.
