A warm and hearty white chicken chili, perfect for chilly nights and gatherings. This dish features tender chicken, creamy beans, and a blend of spices.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté onion and garlic until soft.
  2. Add cooked chicken, white beans, corn, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Stir in heavy cream and heat through.
  5. Serve hot, garnished with chopped cilantro.

Notes

For extra heat, add some diced jalapeños. Adjust spices according to your taste preference for milder or spicier chili.
