A delicious baked chicken cordon bleu that is crispy on the outside and gooey on the inside, served with a tangy mustard-sour cream sauce.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 4 slices cooked deli-style meat
  • 4 slices Swiss or Gruyère cheese
  • 1 cup breadcrumbs (panko for extra crunch)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 1/4 cup Dijon mustard
  • 1/4 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly oil it.
  2. Flatten each chicken breast to about 1/4 inch thickness between plastic wrap.
  3. Layer each flattened breast with a slice of deli meat and a slice of cheese.
  4. Roll each breast tightly, securing with toothpicks if necessary.
  5. Prepare shallow dishes with seasoned flour, beaten eggs, and breadcrumbs.
  6. Dredge each roll in flour, dip in egg, and coat with breadcrumbs.
  7. Place the rolls seam-side down on the baking sheet and drizzle with olive oil.
  8. Bake for 30 to 35 minutes, until golden and the internal temperature reaches 165°F (74°C).
  9. Whisk together Dijon mustard and sour cream for the sauce.
  10. Slice the rolls and spoon the mustard sauce over each serving.

Notes

You can use gluten-free breadcrumbs or almond flour for a gluten-free option, and substitute sour cream for Greek yogurt for a lighter sauce.
