Juicy bone-in, skin-on chicken thighs with a crispy exterior and flavorful spice mix, perfect for weeknight dinners or entertaining guests.

  • 4 Bone-in, skin-on chicken thighs
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs very dry with paper towels.
  3. Whisk the olive oil with garlic powder, onion powder, paprika, dried thyme, salt, and black pepper in a small bowl.
  4. Rub the mixture all over each thigh, coating under the skin for extra flavor.
  5. Arrange the thighs skin-side up on a parchment-lined baking sheet.
  6. Roast for 45 to 50 minutes, or until an instant-read thermometer reaches 165°F (75°C).
  7. Broil for 3 to 5 minutes at the end for extra-crispy skin, watching closely.
  8. Remove from oven and let rest for 5 to 10 minutes before serving.

Notes

For extra crispiness, pat the skin dry and give the thighs room to circulate on the sheet. You can also use a wire rack inside the baking sheet.
