Foil-Baked Salmon with Asparagus

A quick and easy foil-baked salmon with tender asparagus, drizzled in garlic butter and finished with lemon and parsley.

Ingredients

  • 4 salmon fillets
  • 1 bunch of asparagus, trimmed
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Tear four sheets of aluminum foil, each large enough to fold into a sealed packet.
  3. Divide the trimmed asparagus among the foil sheets and lay a salmon fillet on top of each bundle.
  4. Combine the melted butter with the minced garlic in a small bowl. Spoon or drizzle the garlic butter evenly over the salmon.
  5. Place 2 or 3 thin lemon slices on each fillet and season with salt and pepper to taste.
  6. Fold the foil up and over the salmon to form a sealed packet, crimping the edges so steam stays inside.
  7. Arrange the packets on a baking sheet and bake for 20 minutes. Cooking time is for medium doneness; add 2 to 4 minutes if you prefer well done.
  8. Open each packet carefully away from your face to release hot steam. Garnish with chopped parsley and serve immediately.

Notes

For a lighter finish, use olive oil instead of butter. Swap lemon slices for lemon zest and a squeeze of juice for more citrus aroma. If asparagus stalks are thick, halve them lengthwise for even cooking.
