A quick and flavorful dish with crispy chicken and a tangy sweet and sour sauce, perfect for busy weeknight dinners.

  • 1 pound boneless, skinless chicken breasts
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup sweet and sour sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces.
  3. Season the chicken with salt and pepper.
  4. Dredge each piece of chicken in flour, then dip in the beaten eggs, and coat with breadcrumbs.
  5. Place the coated chicken pieces in a baking dish.
  6. Drizzle with vegetable oil.
  7. Bake for 20-25 minutes, or until golden brown and the internal temperature reaches 165°F.
  8. Remove from the oven and pour sweet and sour sauce over the chicken, tossing to coat.
  9. Return to the oven for an additional 5-10 minutes.

Notes

For extra crunch, double-coat the chicken by repeating the flour, egg, and breadcrumb steps. Garnish with green onions before serving.
