A simple, pantry-friendly dinner that delivers moist, flavorful chicken with a quick marinade.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh basil leaves for garnish, optional

Instructions

  1. Whisk together balsamic vinegar, olive oil, honey, garlic, oregano, and thyme in a medium mixing bowl.
  2. Season the marinade with salt and pepper to taste.
  3. Place the chicken in a resealable bag or shallow dish and pour the marinade over it.
  4. Refrigerate for at least 30 minutes, preferably 2 to 4 hours.
  5. Preheat the oven to 400°F (200°C).
  6. Remove the chicken from the refrigerator and let it sit at room temperature for 10 to 15 minutes.
  7. Line a baking dish with foil or parchment paper and grease it with olive oil.
  8. Place the marinated chicken in the prepared dish, spacing them evenly.
  9. Pour remaining marinade over the chicken.
  10. Bake for 25 to 30 minutes, until the internal temperature reaches 165°F (75°C).
  11. Let the chicken rest for 5 to 10 minutes before slicing.
  12. Drizzle with pan juices and garnish with fresh basil before serving.

Notes

Pound thicker breasts to an even thickness for uniform cooking. Use light olive oil for a neutral flavor, or extra virgin for a fruitier note.
