A quick and satisfying bowl featuring pan-seared chicken, fresh vegetables, rice, and a creamy sweet-chili sauce.

Ingredients

  • 2 chicken breasts
  • 1 cup chopped bell peppers (any color)
  • 1 cup broccoli florets
  • 1 cup cooked rice or cauliflower rice
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (optional)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat a skillet over medium and add a little oil.
  3. Cook the chicken 5 to 6 minutes per side until the internal temperature reaches 165°F.
  4. Let rest for 3 minutes and then slice thinly.
  5. Steam or sauté bell peppers and broccoli until bright and crisp-tender, about 3 to 4 minutes.
  6. Whisk together mayonnaise, sweet chili sauce, and sriracha in a small bowl.
  7. Divide rice between bowls and top with sliced chicken and vegetables.
  8. Drizzle sauce over each bowl and finish with green onions.
  9. Serve right away.

Notes

Swap rotisserie chicken to cut cooking time. For a dairy-free option, use vegan mayo. Double sauce ingredients for more sauce.
