Quick and colorful bowls featuring bite-sized pan-fried salmon tossed in a creamy, sweet-sriracha sauce. Perfect for weeknight dinners or meal prep.

  • 1 pound salmon fillets, skin removed if preferred
  • Rice (white, jasmine, or brown)
  • Fresh vegetables: cucumber, bell pepper, avocado (sliced or diced)
  • 1/2 cup mayonnaise
  • 23 tablespoons sriracha sauce
  • 1 tablespoon honey or 1 teaspoon granulated sugar
  • 1 tablespoon fresh lime juice
  • Salt and freshly ground black pepper
  • 23 tablespoons oil for frying (canola, vegetable, or grapeseed)

Instructions

  1. Cook the rice according to package directions. Keep it warm.
  2. Whisk together mayonnaise, sriracha, honey, lime juice, and seasonings in a medium bowl.
  3. Cut the salmon into 1-inch bite-sized pieces, pat dry, and season lightly.
  4. Heat oil in a skillet over medium-high heat until shimmering. Add salmon in a single layer.
  5. Cook the salmon, turning gently, until golden and opaque, about 2–4 minutes per side.
  6. Transfer the hot salmon to the bowl with the sauce and gently toss to coat each piece.
  7. Divide the rice among bowls, top with sauced salmon, and arrange vegetables on the side.
  8. Drizzle any remaining sauce on top and serve immediately.

Notes

For a lighter sauce, swap half the mayo for Greek yogurt. Use brown rice for more fiber; allow extra cook time. Check sriracha labels for gluten-free options.
