A vibrant salad combining roasted beets, creamy feta, and fresh cucumbers for a healthy and fulfilling dish.

Ingredients

  • 2 large Beets
  • 100g Feta cheese, crumbled
  • 1 cup Cucumber, diced
  • 2 tablespoons Fresh dill, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Roast or steam the beets until tender, then peel and slice them.
  2. In a bowl, combine the sliced beets, diced cucumber, and crumbled feta cheese.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss gently.
