Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Toss the sliced strawberries with sugar and set aside to macerate.
  2. Preheat the oven to 425°F (220°C).
  3. Combine the flour, baking powder, and salt. Cut in the butter until resembling coarse crumbs.
  4. Stir in the milk until just combined.
  5. Knead the dough gently on a floured surface and roll out to 3/4 inch thickness, then cut out rounds.
  6. Place biscuits on a baking sheet and bake for 15-20 minutes or until golden.
  7. Whip heavy cream until soft peaks form, then add powdered sugar and vanilla.
  8. Assemble layers with strawberries and cream.

Notes

Use cold butter for flakier biscuits, and allow strawberries to macerate for at least 30 minutes to enhance their sweetness.
