An elegant layered dessert featuring whipped mascarpone, quick-dipped ladyfingers, and bright mixed berries, perfect for summer gatherings.

  • 1 cup mascarpone cheese (full fat for best texture)
  • 1 cup heavy cream (cold)
  • 1/2 cup sugar (granulated)
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries) โ€” fresh is best; frozen works if thawed and drained
  • 1 package ladyfinger cookies (savoiardi)
  • 1/2 cup coffee or berry juice (cooled)
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Chill a mixing bowl and beaters briefly so the cream whips faster.
  2. Pour cold heavy cream into the bowl. Add sugar and vanilla. Whip until soft peaks form.
  3. Gently fold the mascarpone into the whipped cream until smooth and uniform.
  4. Pour coffee or berry juice into a shallow bowl. Quickly dip each ladyfinger for about 1 second per side; do not soak.
  5. Arrange a single layer of dipped ladyfingers across the bottom of your serving dish. Break cookies to fit if needed.
  6. Spread half of the mascarpone mixture evenly over the ladyfingers.
  7. Scatter about half of the mixed berries over the mascarpone layer. Press lightly so berries nestle into the cream.
  8. Repeat with the remaining ladyfingers, remaining mascarpone mixture, and the last of the berries.
  9. Dust the top evenly with cocoa powder just before serving.
  10. Refrigerate for at least 2 hours to let flavors meld and textures set.

Notes

If mascarpone is very stiff, let it sit at room temperature for 10 minutes to soften. For a lower-sugar version, reduce sugar to 1/3 cup or use a blended sweetener suitable for whipping.
