A delightful casserole combining cream cheese and fresh blueberries with hearty bread, perfect for breakfast gatherings.

  • 1 loaf of bread (e.g., challah or bagels)
  • 1 cup cream cheese, softened
  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cut the bread into cubes and place half in the baking dish.
  3. Spread the softened cream cheese over the bread cubes, then sprinkle half of the blueberries.
  4. Add the remaining bread cubes on top and finish with the remaining blueberries.
  5. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  6. Pour the egg mixture over the bread and blueberries, ensuring all the bread is soaked.
  7. Cover the dish with foil and refrigerate for at least 1 hour or overnight.
  8. Bake covered with foil for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until golden brown.
