  • 1 carrot, grated
  • 1 red bell pepper, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: chopped parsley or cilantro for garnish

Instructions

  1. In a large bowl, combine the shredded cabbage, grated carrot, and chopped red bell pepper.
