A comforting and indulgent chicken dish baked under a cheesy mayo or Greek yogurt mixture, perfect for a quick weeknight meal.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise or plain Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Optional garnish: chopped parsley or chives

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-by-13-inch baking dish.
  2. In a small bowl, combine mayonnaise or Greek yogurt, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth.
  3. Pat the chicken breasts dry with paper towels and arrange them in the prepared baking dish in a single layer.
  4. Spread the creamy Parmesan mixture evenly over the top of each chicken breast.
  5. Bake uncovered for 25 to 30 minutes, or until a kitchen thermometer reads 165°F (74°C) and the topping is golden and bubbling.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with chopped parsley or chives if desired.

Notes

If breasts are uneven in thickness, pound to uniform thickness or slice thicker ones horizontally. Freshly grated Parmesan melts best, but pre-grated works in a pinch.
